Chilaquiles en Salsa Verde

Salsa Verde

  • 1 pound tomatillos, husked and rinsed

  • 2 serrano pepper stemmed and seeded

  • 1 medium white onion

  • 8 cloves garlic

  • 1 teaspoon kosher salt

  • 1 cup chopped cilantro

Totopos fried tortilla chips

  • 12 corn tortillas

  • 4 tablespoons vegetable oil, for frying

Toppings

  • 1/4 cup cotija cheese

  • 1/2 cup sour cream or Mexican crema (optional)

  • 4 fried eggs

Instructions. Place the tomatillos, serranos, onion, and garlic on a sheet pan drizzle with olive oil. Roast on 400F for 20 minutes til lightly charred. Transfer the tomatillos, serranos, garlic and onion to a blender. Add the cilantro, garlic, lime juice, and salt and blend until smooth. Add salt to taste.

Tear corn tortillas into 1-2” pieces. Fry til golden brown & crispy in oil and drain on paper towel. Gently toss chips in salsa verde to coat. Top with fried eggs. Serve immediately and garnish with cotija cheese & cilantro. Crema optional.
